In crafting the menu, I aimed to draw parallels between the bountiful flavors and coastal charm of the East Cape and the South of France. By utilizing native, locally sourced produce and the freshest seafood from the Sea of Cortez, along with herbs unique to this region, I sought to evoke the culinary essence of both regions.
